This quick and easy egg frittata makes a great supper on a cold winter night. Serve with a crisp green salad or slices of tomato drizzled with olive oil.
FRITTATA SUPPER
You will need the following ingredients:
3 Tablespoons milk
2 cups O'brien style potatoes with peppers and onions
1 cup diced proscutto or ham
1/4 cup fresh basil, chopped
1 cup mozzarella or provolone cheese, shredded
1/3 cup grated parmesan
Dried oregano, salt, and pepper to taste
Pan saute the potatoes in a little olive oil to crisp. Whisk eggs and milk together, and mix in all remaining ingredients, including the potatoes. Pour into an oiled cast iron skillet or low oval casserole. Bake at 350 degrees for approximately 30 minutes until eggs are set and frittata is a light golden brown. Let stand about 5 minutes before cutting into wedges to serve.
