September 2009 - Feta and Spinach Breakfast Burritos

On a recent road trip, our very dear friend and neighbor Debbie Rogers treated us to a delicious early morning picnic of Greek Yogurt and Fruit parfaits with Kashi, and these amazing Feta and Spinach Breakfast Burritos featuring Rainbow Egg Farm eggs! 


FETA AND SPINACH BREAKFAST BURRITOS

For each burrito you will need the following ingredients:

     2 fresh RAINBOW EGG FARM eggs

     1 t butter

     1 t olive oil

     ¼ c chopped fresh spinach

     1 ½ T feta with sundried tomatoes and herbs*

     1 ½ T plain feta

     1 low carb multigrain tortilla

Scramble the eggs in a skillet with a little melted butter and olive oil, then add the chopped spinach and both feta, sautéing for an additional minute or so just until it all comes together to form a filling.

Warm the tortilla in a microwave for about 15 seconds, then spoon in the egg filling, and fold and roll as you would to form a burrito.  These may be served immediately, or made ahead and wrapped individually in parchment to go!

* feta with sundried tomatoes and herbs can be found at Trader Joes and other specialty markets.
